- 250 gms Konjac Noodles (prepared as per packet instructions)
- 300 gms Firm curd
- 40 mls Vegetable Stock
- 2 tbs lightweight soy
- 1 tbs vegetable oil
- 2 Garlic Cloves (crushed)
- 2 tsp Ginger (grated)
- 2 Stalks Lemongrass (grated)
- 1 Medium purple onion
- 300 gms Broccoli/Broccolini
- 150 gms Pak Choy/Bok Choy
- 120 gms Bean Shoots
- 2 Stalks onion (Spring Onion)
- 1 little hot dog Chili
- 1 tsp benni Seeds
- 1/2 tsp oil
Steps
- Heat oils in a very cooking pan and add garlic, ginger, lemongrass and purple onion and stir-fry till soft.
- Add tofu, broccoli and, fry till tender and curd is golden brown.
- Add the soy, vegetable stock, bok choy. fry till bok choy has stale.
- Add bean sprouts, onion, hot chili, and noodles, toss along and serve.
- Sprinkle with benni Seeds
